Challah

This month I made Challah breads for the may edition of the Daring Bakers Challenge. They were definetly yummy but the recipe yeilded way to much for just the two of us, I would suggest that you cut the portions in half since this recipe made 3 loafs!!  Ingredients: 31g fresh yeast 1 cup of warm water 1/2 cup of brown sugar 1/2 cup of  butter 2 tea of salt 4 cups of white flour 2 cups of whole wheat flour 1/2 cup of rolled oats 1/2 cup of honey, my little personnal touch 3 eggs Additional flour for kneading and 1... Easy and Delicious Quick Breads

Rasberry, Almond and Yogurt Loaf: This recipe was adapted from the Joy of Cooking, it stays very close to the original recipe I just added a few personnal touches. Mix all the dry ingredients in a bowl: - 2 cups flour (T65) - 1 tbs baking powder - 1/2 tea salt   In another bowl beat: - 2 eggs - 1 cup milk/ yogurt - 2/3 cup sugar - 100g melted butter - 1/2 tea vanilla - 1/4 tea almond essence   Swiftly mix the dry and wet ingrediants, don't over mix!   Pour into a loaf pan, then top with: -1 cup... Pan fried zucchini and olive patties

Mix in a big bowl : 1 grated zucchini 1/2 cup chopped green olives 1/4 cup oatmeal 3-4 tbs potato flour 1 egg salt and pepper to taste. Scoop up about 1/4 cup of the mixture and place in a frying pan. Fry in sunflour oil for about 5min on each side or until golden brown.Yields 8 mideum sized patties.              Serve with melted cheese (mimolette or gouda) and jalépenos in a tortilla or on a hamburger bun. Ugly but delicious heart tarts

Crust: 4 ts whole wheat flour 2 ts vanilla sugar 2 ts  oatmeal 5 ts gounded hazelnuts 4 ts sunflowerseed oil a pinch of salt Mix all of the ingredients listed above. Butter the mini tart pans. Divide the mixture up between the 4 pans and press it down. Easter muffins

Cream:150g butter2/3 sugar Add:3 eggs1 tea vanilla extract1 tea cinnamon1/2 tea salt Mix in little by little:2/3 cup white flour1 cup whole wheat flour3/4 cup oatmeal 1 packet of baking powder1 cup applesauce Mix in a seperate bowl:1/3 cup sweetened condensed milk 100g melted chocolat Preheat the oven to 200°C. Put one tablespoon of batter in each muffin hole add on top a teaspoon of the chocolat mixture then finish one more tablespoon of batter. Bake for about 10min. Yields 12 muffins

Granola

Preheat the oven to 210°C Mix : 1 cup oatmeal 1 cup  5 cereal flakes 1/2 cup germe de blé 1/2 cup  flocons de quinoa 1/3 cup sunflower seeds 1/3 cup pumkin seeds 1/3 cup almond slivers 1/3 cup shreaded coconut 1/2 tea salt Heat in a baking  pan : 1/2 cup vegtable oil 1/3 cup corn syrup 1 tea vanilla extract Mix in the dry mixture.
