Easy and Delicious Quick Breads

Rasberry, Almond and Yogurt Loaf: This recipe was adapted from the Joy of Cooking, it stays very close to the original recipe I just added a few personnal touches. Mix all the dry ingredients in a bowl: - 2 cups flour (T65) - 1 tbs baking powder - 1/2 tea salt   In another bowl beat: - 2 eggs - 1 cup milk/ yogurt - 2/3 cup sugar - 100g melted butter - 1/2 tea vanilla - 1/4 tea almond essence   Swiftly mix the dry and wet ingrediants, don't over mix!   Pour into a loaf pan, then top with: -1 cup... Appams and Mambazha Pulisseri...Then an Egg Hopper

1) Prepare Coconut paste and set aside: -1c dry shreadded coconut -a pinch of cumin -1 red chili - a pinch tumeric -1/2 water Grind coconut, green chillies, cumin and turmeric along with 1/2 cup water to form a coarse paste and set aside. 2) Prepare Yogurt mix and set aside:  -2c well whipped fromage blanc ( Thick plain yogurt in the traditionnal recipe)  - salt to taste  - 1 tbs water  - 1 tea rice flour Beat the yoghurt till smooth. You may add a tea of rice flour... Eggplant Khachapuries

This is a little adaptation of the traditionnal Georgian khachapur'y recipe (cheese bread) Dough Mix:1 yogurt2 cups of flour1 package of baking powder1/2 tea salt4 tbs olive oil(+1/4 cup of water if necessary)Knead together and form a none sticky ball, cover and let it sit for at least a half an hour. Filling Meanwhile steam:2 chopped up eggplants1 diced onion Drain and tear up one freash mozarella ball.
